Our seasonal gins tell the story of the living lands of the Wicklow mountains that surrounds our home in Glendalough throughout the four seasons of the year. Throughout each season, we forage what grows at that time, to craft a batch of gin which encapsulates the smells and tastes found during each seasonal window.

SPRING GIN:
- The Nose: A floral perfume with hints of gorse flower, grassy notes of sweet wood ruff and dandelions with a touch of pine and birch sap.
- The Taste: Faint coconut notes from the gorse flower, citrus from wood sorrel and sweet, fresh pine.
- The Finish: Warming, citrussy and long.
SUMMER GIN:
- The Nose: A meadow in bloom. elder flower, primrose, fresh citrus and ripe green apples.
- The Taste: Robust & powerful with a warming, growing sweetness of honey dew, melon & strawberry. Earthy mid notes followed by spice with zesty citrus keeping it fresh throughout.
- The Finish: Long and slightly spicy.
AUTUMN GIN:
- The Nose: Earthy but floral with underlying heather and blackberries.
- The Taste: An incredible depth of flavour, smooth and rounded with a touch of sweetness to the fore. Notes of clover, fraughan berries and damsons.
- The Finish: Lingers, long and smooth with citrus and classic notes of juniper.
WINTER GIN:
- The Nose: Distinctive, bright and fresh with winter woods and orange peel.
- The Taste: Evocative, rich, and smooth with pine & fir giving way to earthy mid notes and warm spices. Winter sweetness, cinnamon, elderberry and fennel with just a hint of cloves.
- The Finish: Spicy giving way to a faint wild mint freshness.
