Our Glendalough Single Grain Double Barrel Irish Whiskey begins its maturation process in flame charred ex Bourbon American oak. It is finished in Oloroso casks from Montilla , a small town found in the rolling hills of the Spanish countryside.
We choose the bodega, the liquid, the casks and the cooper in this region of Spain to deliver a terroir driven sense of this land , encapsulated in the liquid when we put our whiskey in these slow toasted casks for aging.
These specially selected casks combined with expert liquid finishing, deliver a rich and complex flavour to our Double Barrel Irish Whiskey.

The nose
Rich with dark fruit, cherry, raisin, fig and Christmas pudding. Floral notes with lemongrass, citrus and a touch of nutmeg.
The taste.
Sweet and smooth, with butterscotch, honey and peppercorn, dried fruit, maraschino cherries and brown sugar.
The finish.
Ginger spices a touch of almond and earthiness.

DOUBLE BARREL BUCK
INGREDIENTS:
- 50ML OF DOUBLE BARREL IRISH WHISKEY
- 10ML OF SIMPLE SYRUP
- 30ML OF FRESH LIME JUICE
- 3 DASHES OF BITTERS
- GINGER BEER
GARNISH: A FRESH LIME WEDGE
INSTRUCTIONS:
- Pour the whiskey, simple syrup and freshly squeezed lime juice into an ice filled highball glass.
- Top with ginger beer.
- Add three dashes of bitters and garnish with a lime wedge.
